We even leave the skin on because it’s tasty and packed with fibre and potassium. It’s great with just about anything. Use it as a side, instead of rice; mash it; make it into gluten-free waffles or brownies; even top it with yoghurt and fruit.

Cooking Instructions
Sauté in a non-stick pan on a medium heat for 2 1/2 minutes. There’s no need for oil. Gently stir until heated through. For best results add a little seasoning.
Microwave in an uncovered bowl. Reduce cooking time if oven setting is more than 900 Watts. Once cooked, turn gently with a spoon and serve.
